Thanksgiving-esque Side Platter or, How to Elevate Simple Winter Vegetables

I need to preface this post by explaining that I do not celebrate Thanksgiving (AUDIBLE GASPS). I grew up with a French-Canadian father who would follow Catholic holidays and a Ukrainian-Orthodox mother who used to celebrate Christmas on January 6-7- I believe that Canadians who celebrate Thanksgiving are most likely anglophones? Is that a thing? I always viewed Thanksgiving as American but we somehow have a different date for it here. Canada was very much founded on Europeans taking over Native land by force, so I guess we have that in common. Although its origin is horrific and pretty dark, I do enjoy an excuse to make a nice meal for my family (my parents are both born in October so the dates almost always coincide regardless- I just don't always serve turkey, this year I made a fabulously intricate Indian dish- take that, pilgrims! Just kidding, there is no link whatsoever between the marvellous cuisine of India and them destroying lives on occupied land, so moving on).

You will need,


Winter veggies:

Rutabaga (1)

Golden potatoes (3)

Carrots (2)

Red onion (1)

with,

Sea salt (I used some that was smoked in beech wood)

Black pepper

Dried oregano (to sprinkle)

Olive oil (3 tbsp)


Nothing intricate,


1. Preheat the oven at 350 degrees

2. Chop all vegetables and sprinkle salt, pepper and oregano and mix them with the olive oil on the platter

3. Roast for 40 minutes (depending on how crunchy/grilled you like your vegetables!)

4. Pour red wine and enjoy your night


What meal should these veggies compliment?


A nice chicken roast, a holiday turkey (in both situations, you could simply place these around the meat platter whilst cooking), even a fresh salmon (I typically like to serve salmon with fresh salsa and avocado, but these vegetables could balance out and winterise this dish!), and another good example- which I am cooking tonight- is bangers and mash! Yes, I agree potato on potato is very Ukrainian of me. But I cannot help it. If one is mashed and the other is served roasted , don't they cancel each other out!? Дякую. На добраніч.


Did you really need all these pictures to illustrate such simple steps? No. Was it overly exciting for me to do? Very. When baby naps, mommy goes wild.
