Easy as 1,2,3: a Three Ingredient Mac n'Cheese

When I was a child, I thought I hated cheese. I would never eat it off of a plate and it could not, under any circumstances, be found in my sandwiches (my poor mother had to create recipes out of cucumber, tomatoes and plain pasta, not together- and don't get me started on my love for sliced Bologne and how long that lasted). However, I guess I wasn't all that wise because one of my favourite dishes was my mom's mac n'cheese. Yes, it's in the title. We would eat it paired with sausages, cut up in tiny cubes (I'm salivating). So I'd like to think that whatever your children do not like, you can disguise into a meal for them. Such as oh, maybe spinach was blended into your dressing, maybe it wasn't?! Because if they cannot see the enemy, hmm...can you really tell? Although, if anyone served me anything with 0.0000001 ounce of goat cheese in it, I would detect it. And I would scream.


So today I figured we would try the easier, most simplified version of that dreamy childhood mac n'cheese for the people who find their fridge almost empty, except for a thing or two. This 3-ingredient recipe not only tastes like childhood, it also takes no time to make. I got the quantities from Alvin Zhou from the Tasty team- cheese sauces are not something you really want to eyeball.


Fun fact, I was still able to completely ruin this one. As I was turning to Ella to finish singing ‘and Bingo was his nam-ooooo’ , we then got into about 7 other songs and by the time I turned around, the cheese had created these ugly burnt clumps which they never quite recovered from. BUT it was still delicious. Moral of the story? Always sing the song. Ugly is still delicious! Just not making it on my blog. So enjoy the picturesque prep.

You will need,

Milk (5 cups)

Macaroni of your choice (around 500 g)

Cheddar or Mozzarella (2 cups, shredded)

1,2,3 steps,


1. In a large pot, bring the milk to a boil.

2. Add the macaroni and stir constantly until the pasta is cooked, about 10 minutes.

3. Turn off the heat, then add the cheese. Stir until the cheese is melted and the pasta is evenly coated - that's the part where I was supposed to turn off the heat but guys I really thought it was just one song. Don't add the cheese before like me! BE BETTER.
